Zucchini Pizza Bites

These are not only healthy, but delicious! They're also quick to make for a healthy snack. We actually grew this zucchini in our home garden and sprinkled some basil on top (also from our garden) for a quick treat. This is a great gluten-free, dairy-free option with those whom have an interest in nutritional psychiatry.


Ingredients:


1 large Zucchini

Marinara sauce

Non-Dairy Cheese (We use Daiya)

Basil

Pepperoni

Kalamata olives


Directions:

1. Cut the Zucchini to whatever thickness you like

2. Place on a baking sheet with parchment paper.

3. Add marinara sauce and sprinkle the cheese

4. Add the pepperoni and then top with basil and olives

5. Preheat the over, and then bake for twenty minutes at 400 degrees.
